Since independence, East Timor has been producing top quality organic coffees controlled by co-operatives. This particular bean is farmed under the CCT (see below).
Organics particularly from the AIFU region have a pleasant degree of acidity with medium to full flavoured body. AIFU coffees are preferred due to their superior cultivation, and the farming process is applauded for it’s sustainable approach to growing coffee.
This coffee bean appearance is comparable to a PNG bean - well balanced, bright and clean tasting. The most suitable roast that we choose is a light through to medium.
The Cooperativa Café Timor (CCT) was founded in the wake of the destruction that was left behind in East Timor after the country gained independence from Indonesia in 1999. In 2000, a group of farmers, in an attempt to successfully market their coffee, united to form CCT.
Today, the organisation has over 19,600 members from sixteen base cooperatives and 494 small-scale farmer groups. Read more about the CCT and it's work here.
Tasting Notes: Subtle floral apricot notes in the front palate. Almonds, malt and cream carry through to a dark cocoa and nut finish.

This one is one of my favorites
