Since independence East Timor has commenced producing top quality organic coffees controlled by co-operatives. Organics particularly from the AIFU region have a pleasant degree of acidity with medium to full flavoured body. AIFU coffees are preferred due to their superior cu, which we normally see early in the season from April through until end of December.
The green bean appearance is comparable to PNG’s, well balanced bright clean tasting. Most suitable roast is either light through medium dark.
Subtle floral apricot notes in the front palate. Almonds, malt and cream carry through to a dark cocoa and nut finish.
Cooperativa Café Timor (CCT) was founded in the wake of the destruction that was left behind in East Timor after it gained independence from Indonesia in 1999. In 2000, a group of farmers, in an attempt to successfully market their coffee, united to form CCT.
Today, the organisation has over 19,600 members from sixteen base cooperatives and 494 small-scale farmer groups. Read more about the CCT and it's work here.
