| PNG PurosaOrganic In March 2005 the 2,600 growers were accepted into the global Fair Trade organization; their co-operative is managed by Coffee Connections. With PNG rural areas suffering under the absence of infrastructure maintenance and development due to a shortage of government funds, life in the village had become difficult due to the lack of infrastructure which meant that villagers had a huge problem in getting cash crops to market. These growers are innovative people and the idea of forming a co-operative society was inspired by the village elders who, seeing that their people were struggling, arranged an initial collection of funds in the form of a small head tax to build up cash to carry out essential road maintenance. The idea grew into a registered co-operative group supported by Coffee Connections Limited to take charge over their destiny, even if only in a small way. The Eastern Highlands Province was first developed as an important coffee region in the early 1980’s when seedlings of the Arabica coffee species Typica, bourbon and arusha were planted extensively in villages and in the two main plantations making up the Purosa group. The Purosa area has been certified organic for coffee since 1991. The rich volcanic soil and plentiful rainfall and sunlight provide excellent growing conditions for this coffee. $16.00 per 250g

India cultivates all of its coffee under a well-defined two-tier mixed shade canopy, comprising evergreen leguminous trees. Nearly 50 different types of shade trees are found in coffee plantations. Shade trees prevent soil erosion on a sloping terrain; they enrich the soil by recycling nutrients from deeper layers, protect the coffee plant from seasonal fluctuations in temperature, and play host to diverse flora and fauna. | East TimorOrganic Since independence East Timor has commenced producing top quality organic coffees controlled by co-operatives. Organics particularly from the AIFU region have a pleasant degree of acidity with medium to full flavoured body. AIFU coffees are preferred due to their superior cu, which we normally see early in the season from April through until end of December. Green bean appearance is comparable to PNG’s, well balanced bright clean tasting. Most suitable roast is either light through medium dark. $16.00 per 250g
| Sumatra Gayo SupremeOrganic This secial coffee found in the sub-region of Gayo displays a unique plant material and trees with extra large cherries. Farmers believe this to be a mutuation of old seedstock when coffee was first planted in the area. Today Sumatrans have been redicovered and the Gayo is distinctive and triple hand sorted to a grade 1 standard. These coffees are usually very forgiving during roasting. They work well on a wide range of roasting equipment and roasting styles. They prefer a darker roast just past 2nd crack for 10-20 seconds. The cup can be very volatile for 5 days after roasting and can create blending issues during this period. Well roasted and blended Sumatras are suited to all types of wet cup coffee making equipment. $16.00 per 250g
